Quick easy salads for you lunchbox







Quick easy salads are great for vegetarian lunchboxes. Salads can be as light and refreshing as you want. They can also make a filling meal. Salads make a welcome change from sandwiches.

Don't forget, salads count towards your 5 a day. A dessert bowl of mixed salad will count as one portion. If you add some pulses or beans to your salad you are up to 2 portions!

What you put into your salad is only limited by your imagination!

Here is one to get you started:

Salad of Couscous with Roasted Vegetables

Couscous is one of North African's traditional dishes. It is made from semolina (coarsely ground durum wheat). Couscous is very versatile making a good base for quick easy salads.

Feeds 2

  • 125g couscous
  • 125ml boiling water or stock
  • Zest and juice of 1 lemon or lime
  • 2 peppers - deseeded and cut into large chunks
  • 1 large courgette - sliced
  • 2 handfuls of cherry tomatoes
  • 2 large portobello mushrooms - thickly sliced
  • handful of toasted pine nuts
  • Fresh sprigs of rosemary or thyme - optional
Spread the peppers, courgette, and mushrooms over a baking tray. Add some fresh herbs if you wish (thyme or rosemary are good). Sprinkle over a small amount of olive oil. Bake in a hot oven (180°C) for 15min, then add the tomatoes to the rest of the vegetables and return to the oven for a further 10min. Allow to cool.

Make the couscous by putting the dry grains in a bowl. Add the boiling water or stock and cover. Leave for 5-10min. Next add the zest and juice of the lime or lemon and the pine nuts. Mix well using a fork to separate the grains.

To prepare for your lunchbox -for 1 portion place half of the couscous in your container and place ½ of the roasted vegetables on the top. Keep chilled until required.

Options: Vary the vegetables or crumble some goat's cheese on top.

Tip:Save on energy and time - don't put the oven on especially to roast the vegetables. Make this dish when you are already baking something in the oven. The couscous only takes a few minutes to prepare once the vegetables are cooked.
